5 Tbsp butter
1/3 cup plus 1/4 cup honey
1/2 tsp vanilla extract
1 1/3 cups whole wheat flour
1 tsp baking powder
1/8 tsp salt
1/3 cup milk
2 cups fresh blueberries
1/4 tsp nutmeg
Preheat oven to 375.
Cream 3 Tbsp butter with 1/3 cup honey. Beat in egg and vanilla.
Combine 1 cup flour, baking powder, and salt. Add alternately to egg mixture with milk. Stir gently but thoroughly.
Pour batter into a buttered 9-inch baking pan. Top with blueberries.
Combine remaining 2 Tbsp butter with remaining 1/3 cup flour and nutmeg until crumbly. Sprinkle over berries. Pour remaining 1/4 cup honey evenly on top.
Bake for about 40 minutes until well browned. Serve warm but not hot, with yogurt, sour cream, or whipped cream. Or, chill and serve cold.
